One of the popular services offered by Steam Canada is commercial hood system cleaning. It is important to clean the whole system from exhaust fan to hood filters. The National Fire Protection Association’s NFPA 96 (NFPA Kitchen Hood Cleaning Requirements) requires trained and certified personnel to clean restaurant kitchen hoods and exhausts on a regular basis (NFPA 96-11.4). This is a fire prevention measure. The fire concern is the level of grease that can accumulate in the shaft behind the filters. The danger is invisible until you remove the filters to see the duct work behind. According to the NFPA, systems serving moderate volume cooking operations should be cleaned twice per year.
